AFTER WEDDING PIZZA? SAY NO MORE.

Although we are going to say more, obviously, because now you’re sold on the idea we need to show you how to make it happen in real life. The answer comes in the form of Dough Man’s Land, a wood-fired pizza van run by three brothers in Glasgow. They’ve converted an old horse box to serve wood fired pizza out of the hatch, and not just any pizza; delicious pizza that can be ready in 90 seconds. That’s magic pizza, that is. We chatted to the boys to learn more about their perfect alternative wedding food offerings:

WHO ARE YOU + WHERE ARE YOU BASED?

We are Dough Man’s Land.
We are based in Glasgow but travel far and wide!

 

DESCRIBE YOUR WORKPLACE.

We make handmade, wood fired pizza from our converted vintage horse box. It is bespoke, unique and can be taken pretty much anywhere, which is handy because we love a ramble!

Our pizzas are made using only fresh, locally sourced ingredients using an oven that can reach a temperature of over 500 degrees, meaning our pizzas can be ready in under 90 seconds. As we can turn around pizzas so fast, it means we can cater for any event, which is also handy as we love a good knees up!

 

WHERE/HOW DID IT ALL BEGIN?

Three brothers from Glasgow with a passion for food, people and the great outdoors decided to do something about there shared interests, and so one night over beer and pizza, Dough Man’s Land was born!

FAVOURITE WORK TO DATE?
Our favourite gig to date was a wedding at the Cowshed in Crail. The venue is located right next to the sea and the building itself, a converted farm house, is absolutely stunning. It has a cosy courtyard with a lane of fairy lights leading the way, and is the perfect setting for our horse-box. The staff were amazing as were the all of the guests, a fantastic night!

WHO / WHAT INSPIRES YOU?
Good food, good company and happy people! We have been working within the hospitality and events sector for many years, and we are thrilled now to be able to combine our experience and passion in our own project. We love working with people and weddings are definitely our favourite gig. Seeing the smile and surprise in peoples faces when we pitch up for an event is the best feeling in the world! We also care deeply about using only fresh, fair and locally sourced produce, so this is all you will ever find in our pizzas, fair, fresh and locally sourced!

DESCRIBE YOUR TYPICAL DAY
Our typical day will normally start the day before! We pride ourselves on only using fresh, handmade dough… never-ever frozen! To do this we start making our dough at least 24 hours before. This is so our dough will be soft, bouncy and nice and fluffy. This can only be done by making the dough from scratch and giving it time to rise. The end result is a pizza that is crispy but chewy and with a puffy crust that will make your mouth do summersaults! We will then pitch up at our event at least 2 hours before we need to start serving. This is to give ourselves time to set up, but more importantly to get our wood fired oven nice and hot! Once it has reached top temperature the fun begins and we start making pizzas!

WHERE’S YOUR FAVOURITE PLACE TO GO?
We love a ramble and exploring new venues and places so our favourite places to visit are always out in the sticks! We have been to weddings in castles, farm houses and factories. The beauty of the trailer is that we can take it pretty much anywhere but being a vintage horse-box means that rustic, iddilic spots are always an ideal backdrop for us to do our thing.

FAVOURITE WEDDING VENUE? 
Our favourite venue would be the Engine Works in Glasgow. Its the venue that we have worked most and actually the first wedding gig we ever did so it has a special place in hearts! It is also an incredible space!

TRENDS YOU HOPE TO SEE THIS SEASON
We hope to see more street food vendors being used. Through our experience we have witnessed first hand how much fun and excitement it adds to the day and is and major talking point (apart from the bride of course!)

It is easy to forget why you are doing what you do, especially during busy periods of the year. We always remind ourselves that what we do is something that we hold very near to our hearts. Being invited to be involved in couples’ special days is such an honour and a joy that we count our lucky starts every day that we get the opportunity to be involved in something that special! x
